Cardamom Cream Puffs: Cannabis Infused

Spending long winters in the great white north I find myself looking for cozy baked treats. Living in a mostly Finnish area, I was inspired to use one of their staple ingredients, Cardamom.
This sweet and peppery spice is used in breads to cookies all throughout the year. This spice brings out the spirit and wonder of the Finnish cuisine.
Inspired by my husbands favorite dessert, Italian cream puffs, I wanted to make a blend of our winter traditions with the new traditions I have grown to know and love over the last five years.

Blending these two ideas I wanted to take it up a notch by making them with cannabis infused butter. To finish off the dessert I chose to fill them with pastry cream and local raspberry sauce (Picked in my own yard).

Cardamom Cream Puffs: Cannabis Infused

Cook time: 45 to 50 Minutes
Yield: 8 Large Puffs
Ingredients

  • 1 Cup Water
  • 1/4 Cup Butter
  • 1/4 Cup Cannabis Butter
  • 1 Cup All Purpose Flour
  • 4 Each Eggs
Cooking Directions
  1. Heat butter and water to boiling.
  2. Stir in All Purpose Flour, until mixture leaves pan and forms into a ball.
  3. Remove from heat. Cool.
  4. Beat in eggs 1 at a time until mixture is smooth and velvety.
  5. Portion onto ungreased sheet pan.
  6. Bake 400 degrees, 45 to 50 minutes. Golden brown, hollow when tapped.
