Medicated Rice Cereal Treats

The Midterm elections have come and gone. I am happy to say that Michigan is now the 10th State to allow recreational marijuana. I have always been a supporter of medical since my father was diagnosed with lung cancer. Unfortunately, he lost is battle with the disease. While he was sick marijuana ingesting helped him immensely with his pain and loss of appetite. Now I support the new recreational laws in helping the decriminalization of marijuana.
Let's celebrate with a easy, delicious rice cereal treats.
This is a medicated(marijuana dosed) product, and also low fat. I replaced the commonly used butter with coconut oil. The frosting on top is literally that, chocolate ganache with a coconut oil base.
Treat Recipe: Yield 18 piece-1/4 piece per dosage
Toasted Rice Cereal                        10 cups
Coconut Oil, Medicated                 10 Tablespoons
Marshmallows                                 12 ounces, 1 bag-regular
  1. Heat coconut oil until melted
  2. Add 1/2 of marshmallows, stir until blended.
  3. Add the other 1/2 marshmallows, stir until blended.
  4. Pour mixture onto cereal, in a bowl.
  5. Use on oiled spoon to stir together all ingredients.
  6. Press, lightly, into sprayed metal baking pan/tin.
Make Ganache
Semi Sweet Chocolate Chips          12 ounces
Coconut Oil, Medicated                   4 Tablespoons
  • Pour ganache and smooth over the top of finished treats.
  • After cooling, cut into 18 pieces

These finished treats are soft and chewy. The ganache never fully firms and stays nice and creamy like chocolate frosting.
